Long weekends usually throw things a little out of whack with supply being delayed by a day and a big game of catch up here at the factory. Just a short wrap of the market today as there isn't too much to report. Wild Barramundi should be a stocked item by the end of this week with good catches reported up north. Now that the weather in the top end has calmed down Spanish mackerel is starting to run and be caught in good numbers. Local seafood continues to impress in quality and consistency with good catches of Sand flathead, King George whiting, Garfish, Calamari, Cuttlefish and Rock Flathead as well as some Duck fish (pictured) being available this morning. A little reminder that Clamms Seafood is the seafood supplier for The Fat Duck so if you have been lucky enough to get a table and loved a particular product like the Saikou salmon (pictured) or WA Marrons through to Kingfish and John Dory you can get all of these products and many more right here.
